Alicorp trained restaurants on

good practices in frying and oil discarding.

 

  • The training was held in Santa Cruz, Cochabamba and La Paz, seeking to improve the use of oils in food preparation, promoting, in addition, its proper recycling. 

More than 160 restaurant representatives participated in the training sessions carried out by Alicorp on Good practices in frying and oil disposal, in partnership with the organisation GreenSide Solutions and the Gastronomic Chambers of the trunk axis. The objective of these sessions was to improve the disposal of the oil used in food processing and its proper disposal for recycling, preventing it from being dumped in drainage systems. 

Alicorp, a leading mass consumption company in Bolivia, present in the Bolivian market with brands such as Fino, Sao, Regia margarine, Don Vittorio noodles, as well as cleaning and home care products such as Bolivar, Uno, Opal, Patito and Sapolio, shared useful information with attendees and specialists who commented on the importance of working with low oxidation oils that are stable at high temperatures to ensure food quality.

They also discussed the importance of daily oil filtering, cleaning of equipment, control of the frying process, correct calibration of instruments and the reduction of temperature during periods of disuse.

For their part, the attendees acknowledged the contribution of the information provided so that their daily work can have a positive impact on the environment. ‘In addition to learning about performance and recycling during the training, Alicorp has also visited us with direct advice to measure the right temperature, care of the thermostat, schedules for the use of large or small machines and learn to differentiate the texture and colour of the oil for discarding,’ said Paul Guardia, operations manager of La Casa del Camba. ‘With all this, we are managing to save up to 30% on the purchase of oil,’ he added.

In the workshops, restaurants were also advised to work with certified suppliers, who are licensed to operate and who abide by current legislation for the responsible and sustainable disposal of oil, avoiding the disposal of oil into the sewage system. According to information provided by GreenSide Solutions, one litre of used oil can affect around 40,000 litres of water.

In alliance with Alicorp, the organisation GreenSide Solutions collects discarded oil from different restaurants to turn it into biofuel while customers benefit through the exchange with necessary inputs for their businesses.
